According to Bizarre Foods with Andrew Zimmern last night (Discovery Channel), "menudo" is a stew made of beef entrails, specifically the inner lining of the stomach and bits of heart.

As a child of the 80's, that answers some questions for me.

That's funny. I was told once by a NewYorican that it was slang for 'small change'.

That makes sense, tho. Small change=small bits of stuff most people consider worthless, like tripe and beef heart. Nothing in menudo is really prime stuff, but put together with the right seasonings, it's quite edible, especially if you don't have much else to eat!

I remember the first time one of my co-workers in California took me out for some "home-cooked menudo" and proceeded to tell me what it was made of. I giggled and gagged at the throughout the whole meal.

You cut it up and put it in the water, add whole hominy kernels, chopped up onions, lots of red chili powder, and let it cook for 6 or 8 hours. It cures all illnesses just like Jewish chicken soup. It is considered a delicacy in south Texas.
